Ingredients
  • Zeus Hard Wheat Flour 1,000g
  • Salt 2g
  • APC Peacock Instant Dry Yeast 12g
  • Water (variable) 520g
  • White Sugar 200g
  • Ultra Bake Vegetable Shortening 20g
  • Gold Bake Butter Oil Substitute 80g
  • APC Bread Improver 4g
  • APC Mold Inhibitor 2g

 

Filling

  • Caramel Filling 500g

 

 

Procedure
  1. Put all dry ingredients into mixer and mix gradually
  2. Dissolve sugar and salt on water
  3. While on a low speed, add water with dissolved ingredients
  4. Once mixture is on 80% development, add fat products (Ultra Bake™ Vegetable Shortening and Gold Bake™ Butter Oil Substitute).
  5. Mix until fully developed. Remove dough and transfer to separate container then cover.
  6. Cut dough into 50 grams and mold. Rest.
  7. Flatten the dough and put the filing. Round.
  8. Proof for 1hr and 30mins or make a finger indentation test.
  9. Bake at 180 degrees C for 15- 18mins. Cool.
  10. Brush the baked product using Gold Bake™ Butter Oil Substitute
